Okay so I'm getting ready to perform my first ceremony this weekend in Florida. And while the bride and groom tell me that everything is on the up and up I'm not so sure. They are planning on going in, getting the license, I'm doing the ceremony and that's it. That seems way to easy to me.
Has anyone done a ceremony in Florida?
Please let me know what else I have to do.

Just make sure you talk to the county clerk prior to the ceremony.
Don't worry about it, you'll be fine

Well, even if they do not get the license, your part of the ceremony is only slightly changed. The part of being married under the eyes of God (or select deity) does not change. You only sign the state paper for them to get the tax benefits anyway.
St Valentine became a martyr saint for having married the unlicensed. At least in this country you won't get beheaded or stoned,...
Don't worry about it just talk to the clerk to see if there any special requirements in that county before you do. I don't think any of the counties require anything special but best to check.
